Talking about Takoyaki

Let's talk about Takoyaki...and no, it has nothing to do with tacos, but it is a type of food. Takoyaki, or fried octopus balls, are a popular street treat in Japan. Takoyaki made in Osaka is the most famous because maybe it was originally created in that part of Japan.
Takoyaki is essentially chopped octopus mixed with some green onions and pickled ginger and then fried inside a flour dough. My favorite part is the mayonnaise and takoyaki sauce that goes on them (for western tastes, it is something like Worcestershire sauce). On top of that goes some toppings that I don't like so much: dried seaweed and dried fish shavings.
Another great part of the Takoyaki experience is watching them cook them in these massive indented griddles. The better chefs put on a show when they speedily flip the Takoyaki balls in their places. If you think typing at a keyboard all day is bad for your wrists, imagine spending an 8-hour shift flipping fried Octo-balls with chopsticks.
Takoyaki is a delicious traditional food. Enjoy it with a beer.
